Customs vary a lot. In the US, 15 to 20% at a sit-down restaurant is usual, and 18 to 20% is common in big cities. In the UK and much of Europe a service charge is often already on the bill, and around 10% is usual when it isn't. In Japan tipping isn't expected. Check the bill for a service charge before adding a tip on top.
The tip is worked out on the bill amount you enter, so if you prefer to tip on the pre-tax total, enter that. Results are rounded to two decimal places, which can leave a cent or so of difference when splitting between several people; round up to be safe. The currency setting only changes the symbol shown, not the maths.
